Chocolate Mochi Muffins
I was inspired to try to make these mochi muffins since we saw them offered online. I came across this recipe by Anita of V for Veggy. It seems like a simple enough recipe and I had all the ingredients handy.
This recipe was slightly adjusted to just 6 muffins since there were only 2 of us at home. 😀

Ingredients :
80 gr Thai glutinous rice
100 gr white sugar
3/4 teaspoon baking soda
1/4 cup butter
2 tablespoon cocoa powder
3/4 cup coconut milk
1 teaspoon vanilla
1 egg
Instructions :
Preheat oven to 350 degree Fahrenheit. Grease the muffin tins. Or use liners.
In a mixing bowl, mix together the glutinous rice, sugar, baking soda and cocoa powder.
Put the butter in another bowl and melt it in the microwave. Let it cool off a bit before cracking in the egg, coconut milk and vanilla. Make sure to mix well before pouring this mixture into the dry mixture. Stir to combine. The mixture should be pretty thin.
Pour the mixture into the muffin tins. Bake immediately for about 28-30 minutes.
Test with a skewer inserted. Skewer should come out relatively clean. Set them aside to cool.
