Making Goi Cuon (Vietnamese Summer Roll)
If you have been to a Vietnamese noodle restaurant, you most likely have come across goi cuon. This roll made with rice paper and stuffed with crunchy vegetables like lettuce or bean sprout. This goi cuon sometimes translated as fresh spring roll or summer roll. The other stuffing could be cooked prawn, barbecue pork or Vietnamese ham.
Make your own goi cuon could be fun. The stuffing could be anything you like. Something crunchy, something savory with a bit carb like rice noodle or even instant noodle like Indofood mie goreng.
Ingredients :
1 pack of rice paper
Cooked rice noodle or cooked instant noodle like Indofood mie goreng (dry)
2 cups of rotisserie chicken
2 cups of stir fry bell pepper or strips of cucumber or iceberg lettuce
herbs like cilantro or green onion cut into bite size
