Bak Kut Teh Singkawang - Singkawang, Indonesia
Our last night in Singkawang and we felt that we have tried all the food that we wanted to try in Singkawang. At least what's available at night. There were a lot of street food near town area of Singkawang consisted of burger, Minang style rice and martabak. Also fried chicken and chips. We checked the map and I remembered the restaurant across from the mixed rice restaurant that we visited the previous night.
When we got there, a group just about to finish. Soon it was just the two of us. We ordered dry bak kut teh (肉骨茶) and I could not resist the pork trotter. So we got both and a plate of stir fry bean sprout. Our focus was protein so we ordered just a portion of rice.
Like most restaurants in Singkawang, this restaurant has a simple interior. One side of the wall had a story of the origin of bak kut teh. It was said that the first Chinese settlers in Nan Yang (South East Asia) were not used to the hot and humid weather so they became ill. To help with the dampness, they started boiling herbs. To avoid calling it medicine, this herb concoction was called tea. Then someone accidentally put in meat bones and it became delicious. 😁
Surprisingly the dry bak kut teh was pretty big. I started to wonder whether our eyes were bigger than our tummies. But hubby was like no problem we could finish it. The bak kut teh had some pork belly and also intestine pieces in it. The combination made the whole dish more interesting.
The pork trotter was equally nice. Even though it's dark but it's not too salty. Tender and not chewy. Went well with rice or without rice. Recommended.
