Revisited : Ramen Halu - San Jose

On our trip to Japan we have not had the chance to try any dipping ramen so hubby was curious about and was looking to try one. We found out that Ramen Halu offered dipping ramen (tsukemen) so off we went on a Saturday afternoon.

We got there at around 1 pm and there were people waiting. We put our name in and waited for about ten minutes. The lady asked if we would take a bar seating. We took it without thinking.

Turned out that their bar seating was very tiny. Just a two seater over looking part of their kitchen. I ordered a tan tan men and hubby ordered the dipping ramen and a rice bowl with chasu.

The dipping ramen was served on a tray consisted of a plate of noodle with it's condiments, a big bowl of dipping broth and a smaller glass of hot soup. The condiments for the noodle consisted of boiled spinach, wood ear mushroom,  slices of bamboo shoots and chasu pork. The noodle was pretty thick and a bit curly. The broth was dark brown, pretty thick and had a hint of tangy. It's pretty interesting broth. Turned out that the hot soup was to be used to dilute the broth to make it more drinkable. Correct me if I'm wrong.

My tan tan ramen looked slightly less fiery compared to my picture of similar ramen years ago. Change of recipe ? Or maybe lighting ? But in terms of taste, I believe it's still similar to how I remember it. Thick noodle with slightly spicy broth served with flavored minced pork, bamboo shoots, spinach, wood ear mushroom and sheet of nori.

All in all very good ramen. Would definitely go back for more especially the dipping ramen
