Days of enchiladas


I stumbled upon this recipe from Good Housekeeping magazine. It looked so delicious that I just had to try making it myself. Not to mention that it was SUPER easy. It's one of those 'semi home cooking'. Just stop by Costco and pick up a roasted chicken and you're good to go... or halfway there. Shred the meat, mix in some corn kernel, chopped cilantro, shredded cheese, salsa and wrapped it up with corn tortilla. Arrange all those tortillas on a baking dish seams down. Mix some enchilada sauce with more salsa and pour on top of those tortillas. Scatter more cheese on top and pop the baking dish in the oven for 20 mins. Voila..you got yourself a healthy, delicious, easy dinner.
